Baron De Ley Pink Rioja

Name: Baron De Ley Pink Rioja
Type: rosé wine
Recipe: PHO: boil 6 cups chicken broth + coarsely chopped onion + 3 cloves + large pinch of cinnamon + some finely chopped lemon grass + 6 crushed cloves of garlic plus some grated ginger + 2 tablespoons of fish sauce.  When the onion is clear, add some sliced brown mushrooms.  Chop some leftover chicken and some spring onions and some coriander and basil.  Put some cooked rice noodles in a bowl and pour the broth mixture over to cover then add the chicken and garnishes and squeeze a lime over it.  Top up with more of the broth stuff.  Feast.

Review/notes: Spicy and spectacular wine for a spicy and spectacular soup (albeit more of a meat and noodle salad than a soup).  Pho isn’t one thing, but rather more of a continuum of things called pho with this just a very narrow spectral line on the full chromatic range that is Viet Namese cooking.

Went off for a run today going north then east then north then west then south in an 11 mile loop.  The wind was always in my face, such is my power.
