Cold but dry Monday,
Chicken cacciatore,
And best wine in weeks.

Name: Villa Belvedere Valpolicella
Type: red wine

Recipe: Chicken Cacciatore:  Salt and pepper four chicken thighs, then dredge them in flour.  Brown in almond oil/olive oil mix and set aside.  Soften red bell pepper, onion, and garlic in the same oil then add 3/4 cup white wine and reduce by 50%.  Add two cans of tomatoes, 3/4 cup broth, some oregano, and capers and bring to a simmer then put the chicken back in and walk away for twenty minutes.  Take the chicken out and thicken the sauce for ten to twenty minutes and cover the pieces with some of it.  Yum

Venue: house in Eastcott

Review/notes: Spectacular wine…spicy, rich, better than I usually get for this sort of meal.
